Where I used to live there was a restaurant that we called Thai, Chi, Mex (not it's real name) The wife was originally from Thailand, moved to central america, met husband and they emigrated to set up the restaurant. People were more familiar with Mexican and Chinese food I guess, and it made for a good mash-up. Maybe your Mexicans will be displaced by central americans.

Plumbing:
Plumbing here is quite different here than in the US. Only thing similar is that in a metric country they use US pipe and fitting sizes.
Differences:  Instead of using PVC and solvent welding pieces together with non waste lines they use a green plastic pipe and a special soldering iron to melt the connections together. To install a stop or other threaded fitting they tap the inside of the green pipe.  Waste pipe comes with one end with a built in rubber gasket and they plug together. Multiple waste pipes from different fixtures do not connect together and all run out of the house separately. Outside they make a concrete pit with the 2" lines coming in on an upper level and the 3 or 5" pipes underneath with a large slot cut into it so the 2" pipes can pour into it from above and the concrete formed around the 3 or 4" pipe to act like a funner into it. Then a removable plastic or metal lid covers it to act like a clean out. They also don't use traps or vent stacks so water goes doesn't go down drains very fast due to the suction. Also sewer gas smells come in. I had all the plumbing redone on my house and specified vent stacks and traps. Couldn't even buy the traps here so had to use "accordion" flex pipe to make them.
Also you are not allowed to flush toilet paper down toilets here. That is because the island is made of  porous  volcanic rock and the sewage just dumps into pits in the ground and drains away down the rocks. The paper would plug up holes in the rock. You must toss your used paper in a bin with a lid with a good seal and toss it in the trash.

Interesting and quirky.
I don't know about the use of "accordion" flex pipe.
Seems like the flow would not flow like it should and eventually cause restrictions.
I know when you use those types of universal hoses in automotive cooling applications... they tend to slow the flow.
But I see your point. Especially with the vent stacks. That makes way more sense than non- venting.
P U!

Too funny.
There's a Kobe's restaurant in Rancho Mirage.
It's one of those Japanese paces that cook the food in front of you on an open grill. Along with the flamboyant flinging of the product.
I was a very good entertaining place to eat. But slowly they lost all of their Japanese cooks and replaced them with Hispanic ones.
It seems they have lost the authenticity... along with their cooks.
The last time we ate there... we were serenaded by what seemed to be a kabuki/ mariachi combo. Along with the hoots and hollers.
