I was talking to a friend of mine yesterday afternoon who is a botanist, and was asking about almonds and that flavoring method.  She told me that the seeds or nuts of those fruits taste similar because they are all within the subfamily Amygdaloideae, which includes cherries, plums, apricots, peaches, and almonds, and they have similar chemical make-ups - including cyanide in varying degrees.  We can learn so much when discussing alcoholic beverages.

That's funny; when I was working on the Seahorse T-Shirt I wanted to use the scientific name for "seahorse" as the company name.  It's "hippocampus" (ancient Greek for horse+sea monster), which is also a part of the brain and is so-named for its resemblance to the sea creature.

I think the original amarettos (from Saronno) were made with bitter almonds, but now it's made with different fruit pits and sweet almonds - they have that chemical compound that mimics bitter almond flavor.  I think bitter almonds do have a concentration of cyanide - which is probably why they're not used.  Hmm, "amaro" in Italian doesn't mean "almond" - it means "bitter"

Just did a price compare on Buffalo Trace: Australia: $54.90 (700ml or 23.67oz). Canada: $41.78 (750ml or 25.36oz).

So the price per 100ml: Australia: $7.84. Canada: $5.57
